I absolutely love fresh homemade tomato sauce; it’s delicious, nutritious, affordable, and easy to prepare.  By making a big batch at once, you can immediately enjoy your fresh tomato sauce over your favorite pasta.  By freezing the sauce, it is readily available for a quick meal when life gets busy.  The sauce can be enjoyed in so many ways: as a base for soups and stews or drizzled over your favorite pasta or chicken. This healthy tomato sauce is made with fresh organic local tomatoes, onions, garlic and herbs, creating a wonderful flavour.  Ontario tomatoes are in season from July to October.  The mighty tomato is a powerhouse of nutrients, Vitamins A, C, and E to name a few.  The lycopene found in tomatoes acts as an antioxidant promoting a healthy heart.  So what are you waiting for?  Enjoy this simple and delicious homemade tomato sauce today!

 Homemade Tomato Sauce

What you need:

5 pounds of Ontario organic Roma tomatoes

5 cloves of fresh garlic

2 medium onions, diced

¼ cup of cold pressed extra virgin olive oil

¼ cup of fresh basil leaves, finely chopped

2 sprigs of fresh oregano

2 sprigs of fresh thyme leaves

1 teaspoon of sea salt

What to do:

Prep Time: 30 minutes

Cook Time: 2 hours

Serves: 6 people

  1.  To peel tomato skins, cut a small x on the top of each tomato and drop into boiling water for 10 seconds and then immediately submerge tomatoes into a bowl of ice water. Skins will easily peel off.
  2. To remove seeds from the tomatoes, cut the tomatoes in half and gently squeeze into a sieve over a bowl to catch the seeds as the juice runs out.
  3. Pulse tomatoes in a food processor several times.
  4. Pour extra virgin olive oil into a large pot over low heat.
  5. Add diced onions and garlic and sauté for 5 minutes or until onions are translucent.
  6. Add tomatoes, basil, oregano, thyme, and sea salt.
  7. Simmer on low heat for 2 hours. Cook uncovered.
  8. Eat fresh with your favorite pasta, or store sauce in fridge for up to 3 days or freeze sauce to have on hand for other meals. Enjoy!
