A few words from Dawn & Ed:
We love the apple cake because it highlights the versatility and the flavor of Red Fife, a heritage wheat from Ontario. The apple cake is essentially a one bowl recipe and easy to do if you have apple butter on hand. We make apple butter every Fall from organic apples from Avalon Orchards. This cake is moist and not too sweet and perfect for breakfast or an afternoon snack.
Red Fife Apple Butter Cake
What you need:
725g apple butter, plain
260g sugar
130g brown sugar
180g extra virgin olive oil
3 eggs, large
11/2tsp. vanilla
500g red fife
21/4tsp. baking soda
1/2TB. cinnamon
1/2TB. ginger
1/2T. allspice
1/2T. salt
Maple Glaze:
2 T maple syrup
½ c powdered sugar
What to do:
Whisk together apple butter, sugar, oil, eggs, and vanilla in medium bowl. Mix remaining ingredients in. Brush loaf pan with oil and line bottom with strip of parchment. Bake 300F. for 55-60 minutes. Top w/maple glaze while warm. 8 slices per loaf
About Dawn & Ed:
Dawn Woodward and Edmund Rek started Evelyn’s Crackers in 2007, after moving to Toronto from Philadelphia, Pennsylvania. They both have extensive experience in the culinary world with Ed, a classically trained chef and Dawn a longtime pastry and bread baker.
They were introduced to Red Fife by friends in Grey Country and soon after met Patricia Hastings of CIPM farm in Madoc, ON. and fell in love with her grains, especially her Red Fife. The crackers were created soon after and offered at farmers markets in 2008. Evelyn’s Crackers now includes a line of whole grain pastries available at the markets.
Dawn has taught whole grain baking workshops at Grist and Toll Mill in Pasadena, CA, Kneading Conference in Skowhegan, ME and at the Grain Gathering in Mt. Vernon, WA. Ed also teaches culinary classes at George Brown College.
