This seasonal recipe comes from Cassandra Rizzotto and Lisa Sweetman at Earth + City!
A few words from Cassandra and Lisa: We always get incredibly excited for the arrival of Spring. As a vendor at 10 weekly farmers’ markets in Toronto, the outdoor market season is when we thrive in our business the most, fully surrounded by Ontario’s bounty. Wild Leeks are one of those first few items that signal the arrival of Spring – their bright green tops let the province know that the cold is passing and new growth is on its way. Pesto dip is one of our most favourite toppings and so it is natural to add vibrant, flavour-packed Wild Leeks to the recipe. Hit up Forbes Wild Foods when the markets move outdoors to get the freshest, foraged goods!
What you need: (Serves 2)
1/2 cup sunflower seeds
1/4 cup pine nuts
25 grams wild leeks
3 T cup lemon juice
3 T cup olive oil
1 t sea salt
What to do:
Using a food processor, blend wild leeks, lemon juice, olive oil and sea salt until smooth. Add sunflower seeds and pine nuts to the leek mix and blend thoroughly. Food process until mixture is creamy and smooth.
Enjoy! Keeps in the fridge up to 1 week. (Freezes well too)
About Earth + City:
About Earth + City:
Earth + City was founded in 2010 by Cassandra Rizzotto and Lisa Sweetman.
All of our ingredients are thoughtfully chosen, with a focus on seasonal availability. Our produce is sourced from many regional farms, often purchased at our farmers’ markets. The pantry staples in our kitchen are gluten-free, mainly organic, and frequently ordered through local food vendors.
We sell our food at different farmers’ markets in Toronto, four of them year-round. Markets are where we started and you’ll always find us there. Many local shops in town carry our products from neighbourhood grocery stores to downtown cafes. We have an online ordering menu with delivery service throughout the city. This is our way of bringing healthy prepared food closer to you. Our kitchen also caters interesting fresh food for special events and gatherings, accommodating individual preferences and dietary needs.
At our production facility, an additional commercially-certified kitchen is available for rent. We have varying usage options with competitive hourly rates and storage fees. The space is equipped with basic food production tools and appliances. We welcome those making vegan, gluten-free products.
